Stake Coin Flip turns an HMAC-SHA256 value - built from your server seed, client seed and nonce - into heads or tails. The first flip from the seed is your game result; the same seed also generates the following outcomes in sequence as RNG proof, which is why you may see extra coins displayed.
Because the result depends only on the seed pair and nonce, it is fully reproducible and was fixed before the toss. The hashed server seed is the casino's commitment; once revealed on rotation, anyone can recompute the flip and confirm it was honest.
